I didn’t do the inline mod but am running the 180 t stat and the Chevy fan mod with a HD clutch. I’ve had good luck with that. Off-road 100+ outside, I will hit 205 with the air on. Usually it’s at 190 with the air on scooting around town on hot days.

I would try the bearing replacement. It’s cheap, you’re already in there. I would also look closely at your oil pressure right after the bearing replacement. If it didn’t change significantly, then I would look at your oil pressure bypass valve or maybe your oil pump gears broke
