Cold starting

My 04 Disco II, when I start it first thing, the idle will jump up and down to around 1800 RPS and back down to around 1000. It will eventually calm down after several seconds... and will settle around 800 rpms.
It only does it at the first start of the day..
What might be some of the causes?

What oil are you using?
I had to switch to 10w40 for Winter time and 20w40 during the Summer

I am using 10w40, but I have the Lucas oil stabilizer in it as well.
