Make sure to bleed all the air from the system by having the passenger front raised higher than the other.

Can you hear your clutch fan when the truck is in motion?
Make sure your reservoir cap has a proper seal.
Make sure your coolant levels are not low.
Make sure your thermostat is working and not stuck.
Can you hear the condenser fans running when the AC is on? These are the two fans located in front of the radiator and just behind the grill.

You can take it out and put it in a pot of boiling water to see if it opens and closes.

If you do take out the thermostat make sure it is not in backwards. And make sure the little hole near the edge of the unit is in the 12 o'clock position with installing.

But before doing that I would bleed the system for air in the system which will cause the truck to run hot.

are you only using the dash gauge to monitor coolant temps?

if so, pick up an UltraGauge or similar tool to read real time temps. the dash gauge is not terribly trust worthy.

Do you think this thing overheats at highway speeds? Or just in town stop and go traffic? If it's just at lower speeds then check the fans, over speeds of 25mph an hour the fans are not needed. The easiest way to check your regular fan driven by the water pump is to try to wiggle it on the shaft that spins it. If it gets loose it usually doesn't move enough air.
When I fill Disco1 cooling systems I take the plug out of the right side of the radiator and fill it from the reservoir cap untill its coming out the top of the radiator. I've never had air trapped in the system when I do that. Do this with a cold engine, if you take that plug out with the system under pressure it's gonna hurt.
