Wanted to ask the group if anyone had a good recommendation for a shop or rebuilder experienced in Rover front/rear diffs? My long-time builder retired last year and I'm hoping to find someone in SoCal. Thank you.

The one thing I have never rebuild on my Series projects was the differential. Is new or used out of the question? Given all these LS swaps in Defenders these "should" be cheap and are the same diffs in Disco's. We should also be drowning in 300Tdi engines as well - LOL.
You can purchase one pre set up for you from Lucky 8 at whatever ratio you want with a limited slip or a locker...
I had these guys rebuild the front diff from my 04 D2 when it started getting noisy in 2022:
