How much should/could I shave off the heads of the 3.9 heads, to retain stock or better compression ratio, if I use composite gaskets?
How much "meat" is available to remove before you get into trouble?

Thanks
eric

Does your 3.9 have shim gaskets now or composites? If composite, you dont need to skim them. If shims, check the manual for skim limit (dont recall right now) - there is a head thickness check point diagram, showing min thickness.

Did you try this post on www.roversnorth.com BBS? That's where I remember seeing this discussed.
