What's the best way to lubricate the door locks and whatever else is sitting behind the door panels?
Is it easy to get the panels off? What tools do I need? What type of grease/oil should I use?

Lately, the rear door lever has been sticking. And I've noticed some strange noises when locking. Sounds like a lot of friction inside.

Yup, I had the Identical problem when I bought '94 disco in Oct.
I took off the sidepanels on the drivers and passenger sides of the doors. Look for a few screws or bolts on the armrest area as well as door and window lever locations. Pretty much after that it's Plastic push-in kind of fasteners. Be Patient.
Underneath yoy will find a thin plastic covering , glued on, that you should replace after you fix/lube your accuator parts.
Once you can take a look-see at door parts I would suggest that you did a visual inspection of all electrical connecters. spray then with a contact cleaner. make sure you have a good bond when you reconnect them and then move on to the sticking accuator parts.
I took mine out and gave them a good excercise with the key fob thingy, and spread anti-sieze lubricant on any thing that moved . So-fa so-good. I probably would have used lithium grease if I had it. I think that it's made with silicone now . Not sure.....Good Luck...

When you get all the bolts/screws out to remove the door panel. Pull it off from the bottom up ... and some of the plastic pins will most likly pull out of the door panel and stay in the door. You have to try to pull these out with vice grips try to salvage them or buy new ones..

Hey, be careful in pulling off the door panel or you'll wind up breaking the little tabs in the door panel itself. I know! Nothing a little super glue won't fix though.
