What's the towing capacity of the 3.5 and 3.9 Classic? How well does it tow overall?

EC (european community) regulations allowed 3.5to for the later RRC (and Discos) I think.
However, 2-2.5to can be handled safely (given the trailer is all right, suspension bushes are good, tire pressure correct, ..).

I feel my RRC is a good towing vehicle. I do feel aswell that with a big Diesel engine (like the in-line 6 tdi from Toyota) it would tow even better and would be far less thirsty.
I try to have the torque converter of the automatic box locked-up (i.e. at speeds above 53mph) as much as possible - to reduce ATF-fluid temperature.

while earlier figures are probably lower.
More like 2to or 2.5to (former regulations limited max. trailer weight to GVW).
