oil is always a big topic around here and i have usually strayed away. i use 20w50 max life (dyno oil)in both my 93 lwb which has 101k and my disco 1 which has 142k. i also include lucas oil stabilizer in the mix at every change...they seem to work great but i am considering switching to synthetic. I read the amsoil post......and now i am wondering which synthetics to go for. i currently run red line 80/140 in my differentials so this is just for the engine.
disco1 used primarily for long distance trips down to mexico, heavily loaded, and lots of wheeling.
93 lwb long distance trips, mild offroading..more likely to be in colder climes-cold means southern sierras in the wintertime...

I had been running Valvoline 10/30for about 50,000 mile and had a oil leak the entire time. Then, I changed to Rotella T 15/40. The leaks have stopped for what ever reason, and the oil is still brown after 2000 miles.

I still run Mobil 1 in my 99 rover with 69,000 miles. It still leaks like a 215 Buick, and oil is dirty after 2000-2500 miles.

I don't know how this relates to overall protection, but makes you wonder.

Well, you want to avoid big gaps in the viscosity numbers. the more range an oil has the more polymers were added to the formula. Polymers are what cause the varnish and deposits. So you want to avoid the 5-30's, and esp. 10-40. 20-50 starts with a thicker base stock and doesn't have as much polymer content as say a 0-30. None of this applies to synthetics. Amsoil uses a different base stock than Dino oil.
Ed - I would remove the pan of the Disco and clean the deposits which are sure to be there. If you're going to switch, do both.

I had a guy tell me that 20w50 was too thick and would cause excess head pressure at start-up when the oil was "cold". Any truth to this?

No. The dealership here in Phoenix uses nothing but Mobile-1 20-50. You have about the same weather in San Antonio.
