The truck runs like a champ but after awhile 5-10 minutes the warning light appears and it sputters and dies not wanting to restart. After waiting for the truck to cool down it fires right back up and the problem repeats itself. My guess is a sensor of some sort. Any suggestions?

Sensor or ECU. Once the engine reaches operating temp, it counts on the sensors and ecu to adjust fueling. If a sensor or the ecu is faulty, it will make the engine run poorly. Test the easy stuff first, fuel filter, plugs, cap, rotor, wires. Maybe it's something simple. If you have no luck, check out the sensors (temp,O2, etc.)

Sounds like an amplifier or a coil going bad to me.
