I have a 1994 Discovery with an OME suspension lift on it. I want to get some bigger tires on it now. I went to my local Discount Tire Co. and asked them to line up the following sizes:235/70-16,245/70-16,245/75-16,235/85-16 and 31x10.5-15. After some time i narrowed it down to either the 245/75-16 or the 31x10.5-15. They are the exact same height, but the 31x10.5 were about 1" wider. Would this fit on my Disco(with AR steel wheels 4.25" back-spacing)? Will it be able to flex with no rubbing?

Backspacing will obviously push tires out to help avoid steering rub in front, but you'll probably still rub tread on back fender (pushing tire outwards won't allow tire to "tuck into" wheel well).

ok...so i can get the 31x10.5-15 tires...and trim a little bit off the rear and the truck will be able to flex. right?

should be fine - but that's easy for me to say from my chair - you're the one forkin out the dough...anyone else out there in Discoland with 4.25" backspaced 31x10.5-15's on an OME Disco care to comment??? I'm running 245/75/16's on stock alloys. 245/75/16 = 30.4x9.6
