I recently purchased a 1994 Discovery (my first Land Rover). The nearest Land Rover dealership is approximately an hour away. I would be interested in anyone's thoughts on what in the way of servicing should be done by the dealer and what can be handled by regular mechanic? In other words, is there anything about maintaining the Disco that would require me to go out of my way to visit the dealership? Thanks.

Go ahead and use your own mechanic you may want to get a workshop book just incase they come across something that they are not sure about. and if you use the search on the BB you will find almost everything you may want to know.
Congrats and welcome to the Love/Hate relationship you may have with your Disco.
