i'm planning to change my brakes out and was wondering what that wire is that comes out of the brake pads. not all of them have it, just one from the front and one from the rear....

Those are pad wear sensors.

Nope,

Cut it off, you have RR pads. The wire is for a RR but the pads will fit a Disco.

are RR classic and Disco-1 brake pads completely interchangeable?

Some are some arn't.

Lots of different pads on RR based on year but some are just the same as Disco pads but with the sensor.
