What is the best method of trimming these end caps? Do you leave them on the truck or take them off?

keep them on the truck. just trim along the 'line' that exists along the side of the cap. (small channel) use that as your guide. easiest done if you have a Dremel or something similar.
i will post a pic here in a little bit if no one else has one handy.

Leave them on.
Dremmel but an angle grinder works

Brett, I (or someone closer) could send you already trimmed endcaps if you want. I long ago replaced the front bumper but will keep the bumper around for when the ARB needs painting. But I don't need the endcaps. I'll need just a couple beers to motivate the transaction and could send them your way next week.

Moe, I am in Saint Louis. Where are you at? Do you have any idea what shipping would cost? Are they heavy?
Thanks,
Brett

Brett - just use a utility knife and a steady hand while they're still on the truck - it makes a nice clean/smooth cut. Like Garrett said, just follow the existing line on the end caps.
This is only a 10 minute job.

don't bother taking yours off and putting pre cut ones on. too much of a pain. took me 5 min. to cut mine. just get something sharp and cut away. ain't suppose to look pretty.

Would kind of clearance (tire sizes) do you suspect I could get with a 2" lift and an ARB front bumper? I think I've also seen that some are trimming the back side of the wheel wells? When is this necessary?

mike. go to the 'tech' section above and then to the 'tires/wheels' area. should have the info there you are looking for.

I agree, leave the end caps on your Disco. Use masking tape to mark the line the desired line on the bumper end caps. Use a Dremmel with a cut-off wheel to cut the bumper end caps. If you take your time it will look totally professional.
Thanks,
Mike B.
P.S. - Practice a bit on the lower portion of the bumper end cap. You will end up throwing it away, so who cares what it looks like. Cut slowly to prevent the plastic from melting.

Thank you to everyone. I ended up using a razor knife with a new blade. It worked really well. I left them on and was done in about 10 minutes with the whole thing.

Brett - glad it worked well and that you're happy with the results.
