Does anyone know if Mickey Thompson 31 x 11.50 Baja Belted tires would fit on my 2000 disco2? What kind of lift would i need or how much trimming would i have to do?

They should fit as the Claws are typically very "short" for their advertised size. So these are probably 29-30 inchest tall i.e. somewhere between 235/70R16 and 245/74R16. Being 11.50, they're more like a 265+, so you still might have to trim a little. But how much you'll have to see for yourself once you fit them. It depends on the rims you'll be using too.
