I have been crushing some beef jerky with my new dehydrator to prepare for the Alaskan hiking season. SOOOO GOOD! Have you checked how much beef jerky costs nowadays? It's pricy, but not if you make it yourself.

I will post some recipes later.

Sweet and Spicy Beef Jerky (A variation of one I found online)

3lbs meat, sliced at ¼ inch across grain (Flank steak, London broil, top sirloin, etc.)

1 tsp onion powder
1 tsp garlic powder
2 tsp fresh ground black pepper

¾ cup brown sugar
¾ cup soy sauce
¾ cup pineapple juice
1/3 cup worcestchire sauce
1/3 cup Yoshida’s sauce or teriyaki sauce
2/3 cup rice wine vinegar
1/8 cup liquid smoke

Red pepper flakes (optional)


Directions:

1. Mix onion powder, garlic powder, and pepper. Lightly season meat, cover and refrigerate. Reserve the rest of the spices for later.

2. Mix brown sugar, soy sauce, Yoshida’s, worcestshire, vinegar, pineapple juice, liquid smoke, and optional red pepper flakes. Heat up until sugar is dissolved. Pour over meat.

3. Refrigerate overnight or for at least 8 hours.

4. Before dehydrating lightly season meat strips with remaining spices.
