What are some possible ways to remove the centralizing peg? I have been struggling with it all morning, and it won't budge  ! Any advice would be very helpful. Thank-you

if your just removing the rotoflex, you don't need to remove the central peg. just remove the 6 ? bolts, slide it out and slide in the new one
take care

In order of preferred method. ;)
1- Slide hammer
2- Torch
3- Dremel/cutoff tool
4- custom tool from rover
5- makeshift replica custom tool.

Slide hammer is quick and dirty. Need some form of adapter to get the slide hammer attached into the threaded portion of centering peg.

Slide hammer is weight that slides on shaft. Shaft can accept different attachements.

You can get slide hammer from NAPA store. Thats where i got mine. For like 54$ or so. With LOADS of attachements.
One of attachements can be swapped with bolt in large wise-grip pliers (exact same thread size. No idea if its intended or not - but hey.. )

Then you just get bolt threaded as much as you can inside centralizing peg, hook pliers on it and start slide-hammering.. :) About 3 hits and it flies out.

And its got many uses around Disco.. You'll be blessing yourself for buying one..
