What is the function of this unit on a 93 classic? Can one take it off? why or why not?

Also, Does one need to remove the ball joint on the self leveling unit in order to remove the rear 3rd member?

Unit levels the truck when a heavy load is carried in the back of the truck. Yes you can take it off. Just fit stiffer springs at the back. It was on there so that the springs could be kept as soft as possible and offer the best articulation.

The Diff is removeable with or without the SLU.
