You have 170k on your original MAF? I would start there...
I find every 20k I need a new MAF to take care of misfires...
Misfires come, replaced MAF and they have gone away...I think I am on my 5th and I have 250k.
I think hoses are largely the culprit here...have replaced hoses twice on my box and I have 250k on my original OEM box, that is bone dry.
Remanufactured - waste of money. When mine goes are leaks beyond repair I will pony up for the OEM.
So for an 01 Disco that has the CDL spigot - and an Ashcroft CDL installed...what should you do with the wiring? Leave it alone?...if so how does it work and will it disable the TC? I am doing the install this weekend.

So I know what the primary cause is - busted T under the hood, so I was spraying washer fluid all over the engine. Problem solved.
But that would lead me to beleive that there is a a leak somewhere on the top of the engine where water would cause it to stall? I doubt was enough fluid for...
Do you park your truck on an incline? I have found over numerous replacements that if you par on a slight, backward facing incline they will leak at the rear - no matter what you do in terms of gaskets or right stuff...they will leak.

You didn't say when(if) the HG's were last done...sounds like you got the spark issue covered with new equipment...2 cups of fluid low on the coolant would give me pause. These trucks don't "use" coolant so if you are low by an appreciable amount it could be burnining off even with no visible...
So all was good for many miles and now I have the dreaded random misfires - sometimes on 4 sometimes on 3,5,7...
So replacing coil packs (never done), wires and plugs (NGK 5553) and the camshaft sensor(never done) and go from there...truck runs fine otherwise.
