I bought a parts truck and about the only thing i dont want from it is the motor and trans. They work fine but I want to start disassembling the truck.

How much can I get for just the motor? it has 185K miles but runs well.

Should I make a video of it running?

Should I pull it now, or let the buyer pull it?

If I got $400 for the motor and trans, with little work on my part, I would be thrilled

That seems fair. I paid almost that much for a 4.6 and a bunch of extra engine parts to go with it, no trans. Got it from a salvage yard, that was a year ago.
Video is always good even if you don't need it.
If the buyer pulls it, do you care about all the hacked out parts and the mess from fluid spills. Some (most) of these guys at the yards are really crude and don't care.

Well, I'd have most of what I wanted out by then anyway.

My plan is to pick at the little crap my truck needs, bulbs, switches etc.

I really need to sort out my steering. I think I need a new steering box.

Then I want to store an extra alternator, ps pump, as compressor, radiator, etc

I also want to keep the doffs axle shafts calipers, driveshafts etc.

I mostly bought it for the rack and tires

I keep a lot of stuff like that and a lot more.

If it's got a good lock set that thing is gold.
If you go into the doors to get the lock cylinders get all the rods and the latches
Sunroof parts are pretty hard to come by anymore, the motor is no longer available and cost 750 last time you could get one.
If the steering box isnt leaking I would keep that.
Seat switches if they work.
The center console comes right out and I hang them on a nail
All the switches
All the lights
Get the calipers and put pistons in them.If not just to see how easy that is.

I think the biggest reason I still keep one of these trucks around is it costs me next to nothing if something breaks. I have a lot of shit for them.

Keep the fuel pump, too. I pulled one out of my last Disco when I parted it and am glad I did. My truck was only down for a day when the fuel pump failed recently.

I actually just bought a fuel pump for it so that I could run the motor and move around my yard

I should probably run some fuel stablizer in it
