I recently obtained a few of these, in good shape, with good seals, what do you guys use them for? (other than storing ammo)

Dryboxes for week-long rafting trips. Also this, which works surprisingly well, although not in the exact configuration shown here:

Tools. I also have 2 big metal boxes that had some kind of rocket propelled shit in them. I've had people get weird about me bringing those boxes in places. They have explosive warnings all over them.

why not just dig a hole and shit over a log?

Imagine what the Grand Canyon would be like if every single boater who rafted the Colorado did that. The whole point is to create a secure toilet that allows you to carry your waste out with you. The upgraded version of this has a lid with a large screw-on cap that you can plug a special seat into. Then when it's time to move camp you remove the seat, screw in the cap, and you're ready to load the can onto the shit barge for some poor rookie guide to row to the next camp. Works like a champ.
