200F is on the high side of my personal preferences, but not at all excessive.
You could make an argument that a slightly higher, but rather almost constant, temperature is better than overcooling the engine yet allowing the large temperature variations.
It is an interesting argument - different goals.
For me, the lowest-possible pressure in the cooling system is a safer bet while far in the sticks - even if it goes from 170F to 205F many times in a day.
But it is not that great from the engine longevity perspective.
