So I have a '96 Disco, where the rubber around the (nonopening-type) back side windows has split near the corners into jagged Vs. What can I use that will give a pretty good approximation for sealing and appearance?

Black Shoe Goo?
Black silicone sealant?
Some special stuff they make just for this that I don't know the name of?

I've used clear silicone with good success for the last few years. Just be really careful how you apply it and don't make a mess!

Also used it to seal a cracking corner of the rubber windshield seal

Call a windshield repair place. They will have this. I can't remember the name either but it comes in a caulking tube.

I used black silicone years ago and it has held up well. If you watch professional caulkers, they apply the caulk, then use a very soft bristle brush, soaked in soapy water, to smooth it. You can also use a soapy finger to do a decent job. Soap just keeps the caulk/silicone from sticking and making a mess. Best of luck.

I got new gaskets and some 550Lb test (parachute cord) and installed them with my son's help once the new gaskets are on the glass I had him center them and pulled the cord out a little at a time they popped right in. The second one I applied some Talc to the gap and that went even easier. After three years I am seeing some small fissures in the edges of the new seals but they are leak free still.
