Southern Folks: Hot Boiled Peanuts

Looking for good recipes for hot boiled peanuts. I don't see anything remotely close to how my grandfather made them.

I put this thread in the Outdoor section since you cook, and preferably eat, these outside.

When I was a kid I ate the shit out of these things. Every Saturday night on the way to the race track to see my uncle race his stock car, my grandfather would either bring along, or stop and buy, a bag of boiled peanuts on the way to the track. Even though Virginia grows a lot of peanuts, I have never once seen a roadside stand selling them like you see in Georgia or Alabama.

I remember my grandfather always soaked his peanuts before cooking. Seems like he would soak them overnight in saltwater. All the recipes I read online does not call for soaking, so I'm not sure if I remember everything correctly or not. Maybe he just washed the peanuts before cooking?? I'm not sure. I also don't know how much salt he used. Course, salt could be personal preference as one person may like more salt than another.

I've stopped at roadside stands over the years and have had BBQ flavor and/or spicy. I think I like mine plain with salt.

So, any of you southern bunkins have solid recipes?

I do boiled peanuts a couple times a year and it's usually a trial & error thing for me. I do soak them overnight with Zatatrains or Tony Chachere's along with some salt. I honestly couldn't give you any real idea of how much salt but I do use a good amount of the seasoning. My guess is they usually soak 8-10 hours by the time I fire them up in the morning. I've been doing with this for a few years and have been pretty happy with the outcome
