My favorite is ducks. Here in Charleston we've got Teal (green/blue), Woodies, Mallards, Buffleheads, Common and Hooded Mergansers and the occasional Canvasback. I'm pretty lucky here as we have fresh and salt water to hunt so we are able to get a good variety of ducks that you land locked guys can't. As an aside, my dad and I are going together to possibly buy about 60 acres in North Dakota to use as a hunt camp and I'm pretty excited about the prospects of hunting some different stuff than what we've got here in South Carolina.

Can't believe there are no votes for Steelhead. What a great fighting fish, and the upside is that it even tastes good 
North Dakota....Nice. I'm sure my dog would love to get back to her home and do some hunting. I hear it's probably the best in the U.S. for pheasant.
