Where should I stop?

Damn. When you are flying that long the last thing you want to do is stop. I would stop at whichever has the shortest amount of layover.

Having just come back from Frankfurt, I have to say the security there was absolutely abysmal. There is one area AT THE GATES where some flights are still security checking people, meanwhile I have already GONE through security and am waiting at my gate--AFAIK anyone could have passed off anything illegal to me sitting there before they went through security for their flight. Seemed realllllllly stupid to me. Thats a subject for another time though.

I would not fly through ORD if you want to make your connection in Europe. Even if you make your connection, there's a good chance your checked bag(s) will not.

I would either go direct like Axle said from EWR or one of your one stop choices.

Heathrow is cool and you will most likely come into Terminal 3 or 4 depending on what airline you chose. There is plenty to do in these terminals if you have a long layover. Also Paris CDG is a nice airport too, watch out sometimes you have to pass through passport control (ie long wait) in Paris even though you are on a connecting flight.

Frankfurt is huge and can be a pain to get from your landing gate to your departure gate, so watch out for short layovers. Amsterdam is not too bad, just hop a train to the city they run like every 15 minutes.

The only thing to remember is most of the airports in Europe are not in the cities but are outside of them, and in most cases you will have to catch a taxi, bus, or train to get to the city center. On top of that some airlines will not let you store your bags at the airport while you head off to sight see. So if you have a lot of bags you will have to drag them with you. CDG in Paris used to let you store your luggage in lockers but I am not sure if you can do that any more.

KLM flight from Houston to Amsterdam to Oslo it is. The lay over in Amsterdam is only 2 hours, not really enough time for any hard partying.

I'd take the most direct flight that amounts to the shortest time, unless you are going to lay over. If you lay over. Paris would have the best food.
