I'm with you on this. I was a complete convert as well a few years ago after the 1st competition event I ever participated in with Dan. He did the steak entry in cast iron and I never had a steak so good before. Apparently the judges did too from the scoring. I don't do mine inside though, I get a load of charcoal going and the cast iron goes over that since I generate a bit of smoke.but for steaks, I'm a cast iron convert.
How does the cast iron method work? I'll give it a try.

Bonefish blows the doors off of that place for quite a bit less money. If you don't feel like cooking, it's hard to beat.
