I drank a jar of Chapman's concoction at SCARR one year and loved it. I believe that it came from a neighbor of his and he added apples and spices to make the final product. I bought some commercial stuff hoping that I would enjoy it as much as Chapman's mix but the commercial stuff was just awful. I haven't bought any since.

Agreed. All we ever drink moonshine wise is from Chapman. The apple one was fantastic..that was the same year Cvc ate the blackberries from another one. LOL

I still have about a half gallon of that stuff from his neighbor...probably the same vintage.
I got it around '07 or '08.

This many years late and I'm halfway through it.

I thought that neighbor got busted??

flip. have you ever bought any shine from a liquor store that was worth a damn!!

like I said, The Ole Smokey Apple Pie was pretty good. I bought that from the distillery.

On the other hand, I don't have to pay for it when I want it so my liquor store moonshine experience is very limited.

But, even the stuff I don't have to pay for is rough to drink straight off the worm. So, it gets mixed down and treated accordingly.

Why would anybody run an illegal operation in 2015? Get a state license and open up a tasting room and yuppies will come from thousands of miles away to drink tiny samples and buy overpriced bottles.

Because like anything else the government gets their hands on it drives your overhead through the roof and makes it hard to make a profit.

But aside from that I hear the process of obtaining a distillery license is pretty intense. I would not know firsthand, but I've heard it's a real hassle.

Does moonshine mellow with age? I have a couple real deal jars, one blackberry and one straight. They are about a year and a half old and they don't seem to have as much bite as they used to.

Having gone through the permitting process with the TTB for a winery and knowing full well that the distillery license is much more involved, it's easy to see why these dingleberry moonshiners would just stay underground. You sort of need to be able to read before you can apply for a permit. Then once you've gone through the the permitting process, you have to file reports on the operations, which aren't easy either.
